Carrot and Zucchini Fettuccine with Peanuts

Main Ingredients

  • 1 large carrot
  • 1 large zucchini
  • 1 tablespoon of salt
  • 1 tablespoon of olive oil
  • 1 clove of garlic cut in half
  • 1 cup ketchup sauce
  • 1 tablespoon of Parmesan cheese
  • 1 bag of Yummi Nuts Japanese Peanuts

Preparation

  1. Peel the carrot and zucchini. With the same peeler, cut long strips or “noodles” of both vegetables, making sure they are more or less the same size.
  2. Place the steamer basket in a pot and pour enough water leaving ½ finger between the water and the basket, add the salt.
  3. Place the carrot and zucchini on top of the basket, put the pot on the burner over medium heat, cover, and cook for 3 minutes.
  4. Heat the oil in a nonstick skillet and brown the garlic over medium heat, pressing it against the pan to release its juices for 3 minutes. Remove from heat and discard.
  5. Add the “noodles” and brown for 2 minutes; Add tomato sauce, cheese, and peanuts and serve.
