Cashew Hummus
with Yummi Nuts Cashew with Salt
Prep time: 50 minutes
Servings: 1 cup
Main Ingredients
1 ½ cups of cashew seeds soaked and then drained (cover with hot water and let stand for an hour)
3 tablespoons coconut oil
2 tablespoons lemon juice
1 tablespoon of water
1 teaspoon ground cumin
1 teaspoon of paprika
1 tablespoon of chopped parsley
1 head of roasted garlic (cut in half, drizzle with olive oil and bake at 400º F for 35 minutes)
Olive oil and paprika to serve
Preparation
Place all the ingredients in a processor and process until you get a homogeneous mixture.
Place in a serving bowl and drizzle with olive oil and sprinkle with paprika.
Serve with toasted pita bread.
