Main Ingredients

Ingredients for the salad:

  • 6 cups fresh kale
  • 4 cups of cabbage
  • ¼ red onion, julienned
  • ¼ cup chopped cilantro
  • ½ cup feta cheese
  • ¼ cup roasted chili peanuts
  • ¼ cup Japanese peanuts

Ingredients for the vinaigrette:

  • 1 tablespoon apple cider vinegar
  • 1 tablespoon rice vinegar
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • 1 tablespoon honey
  • ¼ cup salted peanuts
  • ¼ cup salted cashew nuts
  • Salt and pepper to taste
  • 2 tablespoons sesame oil
  • 2 tablespoons olive oil

Preparation

For the salad, mix all ingredients in a serving bowl and toss. To prepare the vinaigrette, place all the ingredients in a food processor and process to the right consistency. If it is too thick for your taste, you can add more water.
