Main Ingredients

Ingredients for the dough:

  • 1 stick of cold margarine
  • 1 1/4 cup flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 to 3 tablespoons of ice water

 

Ingredients for the filling:

  • ½ cup salted peanuts
  • ¾ cup dark corn syrup
  • 1/3 cup brown sugar
  • 3 eggs
  • 2 tablespoons melted butter
  • 2 teaspoons vanilla essence
  • ¾ cup crushed Honey Peanuts
  • ¼ cup Omega Mix

Preparation

Preheat the oven to 375°F. To prepare the dough, place the margarine, flour, salt and sugar in a food processor. Process a little at a time until you have a sandy consistency. Add the water little by little while the processor is running. When a homogeneous dough is formed, remove from the processor. Wrap in plastic wrap and refrigerate for 30 minutes. Meanwhile, prepare the filling by mixing the first 5 ingredients with an electric mixer until well blended. Add the 3/4 cup of crushed peanuts and stir with a spatula. On a clean, floured surface, flatten the dough with a rolling pin into a circle. Place in a greased pie pan and fold over the edge. Pour the filling over the dough and sprinkle the Omega Mix on top. Bake for 40 to 45 minutes or until the crust is crisp and beginning to brown and the filling is set. Cool completely to room temperature and then refrigerate for 2 hours before serving.
