Main Ingredients

Ingredients for medallions:

  • 2 pounds ribbon tenderloin cut into medallions
  • 1 tablespoon mustard
  • 2 tablespoons of soy
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 4 tablespoons sesame oil

Ingredients for the sauce:

  • 1 bag of Yummi nuts Chile Toreado
  • 1 bag of Yummi Nuts with Lemon
  • 2 tablespoons peanut oil
  • 1 clove garlic
  • ½ onion very minced
  • 4 tablespoons peanut butter
  • 1 liter of cream
  • 1 tablespoon of red paprika powder (paprika)
  • 2 tablespoons of soy
  • Salt and pepper to taste

Preparation

Medallions preparation:

  1. Mix all the ingredients except the oil in a bowl and spread the medallions.
  2. Heat the oil, lower the heat and fry the pieces until golden brown on both sides.

Sauce preparation:

  1. Crush the peanuts in a processor until it is practically powder, leave a little half crushed aside.
  2. In a pot, heat the oil and fry the garlic and onion until the onion is transparent. Add the peanut butter, then the cream, a little salt and pepper, and the paprika. Stir constantly and keep the heat low.
  3. Add the ground peanuts and continue stirring until thickened.
  4. Pour the sauce over the pork medallions and sprinkle the rest of the peanuts on top
