Roasted cauliflower with

Yummi Sauce

Main Ingredients

Ingredients for the cauliflower:

  • 1 large cauliflower
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Ingredients for cashew sauce:

 

  • ½ cup salted cashews
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 4 tablespoons water
  • 1 teaspoon cumin powder
  • 1 clove garlic, minced
  • Pinch of cayenne pepper

 

Ingredients for serving:

  • Peanuts with Chile Toreado
  • Chopped cilantro

Preparation

Preheat the oven to 425º F and line a baking sheet with baking paper. Cut the cauliflower into 1 ½ ” slices. Brush with olive oil on both sides and season with salt and pepper. Place the slices on the tray and cover them with aluminum foil. Bake for 5 minutes. Remove the foil and roast for 10 minutes, turn them over and roast for 7 minutes more.

While the cauliflower slices are baking, soak the cashews in water for 15 minutes. Drain and place them in a blender. Add the rest of the ingredients and blend until smooth. Serve the sauce with the cauliflower steaks and add fresh cilantro on top.
