Tilapia with Peanut Crust
with Yummi Nuts Peanut with Lemon

Main Ingredients
1/3 cup canola oil
½ cup leek thinly sliced
¼ cup of grated ginger
salt to taste
2 tablespoons of flour
1 egg beaten with salt
½ cup chopped Yummi Nuts with Lemon
2 tilapia fillets
4 teaspoons of rice vinegar
black pepper to taste
Preparation
Heat the oil in a skillet over medium high heat.
Fry the leek and ginger until golden brown. Remove from heat and drain on butler paper, reserve the pan and oil.
Place the flour, egg, and ground peanuts in different deep bowls.
Season the tilapia fillets with salt and pepper. Cover them with flour, then with egg, and finally with the chopped peanuts.
Fry the steaks in the same skillet for 4 minutes on each side over medium high heat.
Serve the steaks on a plate, add the leek and ginger, and drizzle the vinegar over the top.
